Altered eating: insights into sensory alteration and oral symptoms on the eating experience of cancer patients

Sensory alteration and oral symptoms can influence cancer patient’s eating experience. Consequently, these were shown to impact patients’ nutrition, health outcomes, and quality of life. To gain a comprehensive understanding of their eating experience, the objective of the current study was twofold: investigate the prevalence of sensory alteration and oral symptoms in cancer patients and explore their relationship with food preferences and eating behaviour. An anonymous online survey was distributed among various types of cancer patients across France (n=60), Denmark (n=12), and the UK (n=28). The survey comprised questions on sensory perception, oral symptoms, sensory-related food preference, and eating behaviour. Hierarchical clustering analysis was performed to identify different sensory profiles of patients. Multinomial logistic regression and multiple linear regression were performed to explore the relationship of the predicting factors with sensory-related food preference and eating behaviour, respectively. Dry mouth, sensitive teeth, nausea, mouth soreness, and gum pain were frequently experienced oral symptoms. Clustering analysis identified different groups of patients based on their sensory perception: no alteration (48%), increased perception (44%), and decreased perception (8%). The groups differed in their sensory-related food preference; patients with sensory alterations were more likely to have decreased preferences. Somatosensory alteration, followed by oral symptoms and taste/smell alterations, was the strongest predictor of eating behaviour, Patients with sensory alterations and frequent oral symptoms had more difficulties in eating. The study highlights the significance of sensory perception and oral symptoms in cancer patients’ eating experience.
