MOUTHFEEL PERCEPTION AND ORAL SOMATOSENSATIONS: A review of assessment methods in consumers and cancer patients

Oral somatosensation comprises of tactile, temperature and trigeminal sensations, and can be collectively referred as mouthfeel perception. A growing body of evidence have indicated that individuals with altered food flavor perception, such as cancer patients, also experienced alterations in mouthfeel perceptions in addition to taste and/or smell alterations. First, the present review provides an overview of oral somatosensation– receptors and mechanism – and its significance on overall food perception. Second, methods frequently used to measure individual differences in oral somatosensory perceptions are examined and critically evaluated. Although tactile perception can be assessed using several different methods, each method activates different mechanoreceptors hence measures different aspects of tactile function. Moreover, its correlation with perceived food texture often remains inconclusive. Trigeminal perception can be assessed either using nasal or oral stimulations, while temperature perception can be assessed using thermal detection threshold or temperature discrimination test. Altogether, assessing oral somatosensory perception is necessary to obtain a comprehensive understanding of food perception in various subjects, including consumers and patients. Consequently, modifying textural, thermal, and trigeminal properties of food may offer potential solutions for improving eating experience of individuals with altered food perception. The specific case of head and neck cancer patients is considered and illustrated with published data and recommended methods.
