Pulses proteins for the food of the future: innovative multi-scale and multi-component approaches

Résumé

Today's societies face the unprecedented challenge of feeding 10 billion people by 2050 with healthy, safe and sustainable food, and a transition to diets containing more plant-based proteins (including pulses) is already underway. However, a number of technological, nutritional, health, and economic barriers limit a more massive incorporation of this type of protein in food formulations and require significant efforts from the scientific community. In this context, the BIA Unit collectively addresses fundamental questions throughout this construction chain, and implements innovative approaches to deliver knowledge to design the food of tomorrow more sustainable, healthy and tasty. This article reviews these different approaches.
