Incorporation of aromas in nanostructured monolinolein-based miniemulsions: A structural investigation

Lyotropic liquid crystalline monolinolein-based particles were synthesized to study the incorporation of lactones, terpenic derivatives and polyphenols. Particularly, the influence of their solubility and composition on the lipid particle’s internal structure was investigated by small angle X-ray scattering. The monolinolein-based emulsified mesophases were stabilized by the triblock copolymer F127. Without guest molecule, the dispersion was made of Im 3m cubosomes. γ-lactones, poorly water soluble, allowed to favour the Pn3msymmetry, meaning that the γ- lactones influenced the lipid water interfaces in the particles. We observed a larger lattice parameter in the case of γ-nonalactone compared to γ-decalactone, traducing a closer localization to the lipid chain for γ-decalactone. Concerning the effect of terpenic molecules, eugenol had similar impact than the γ-lactones while menthol and thymol had stronger effect, turning the structure into a hexagonal arrangement. The difference in lattice parameters for menthol and thymol is explained by the non-planar structure of menthol. The hexagonal phase was also found in the case of camphor and myrcene. The incorporation of more complex molecules, polyphenols, was also attested. The aim of this work is to investigate the ability of the particles to be used as a carrier for cosmetic actives and food aromas, and to be able to predict this efficiency in relation with the physicochemical properties of the guest molecules.
