Quels impacts d’un intermédiaire dans le circuit de la tortilla de la ville de Mexico ?

The role of intermediary actors in food chains is still largely unknown, even though there is an increasing number of food initiatives aimed at eliminating or transforming them. This article, using the example of an intermediary-processor (a native corn tortilla producer in Mexico), contributes to exploring the new role that this pivotal actor can play in many food circuits. We used a participative methodology for assessing the impacts of urban food initiatives to explore the transformative capacities of these actors' traditional systems. The results highlight real potential impacts, particularly around the revaluation of old processing methods, nixtamalisation. However, these assets are compounded by difficulties in integrating the productive sector on the long term.
Le rôle des acteurs intermédiaires des circuits alimentaires est encore largement méconnu, alors que les initiatives visant à les supprimer ou à les transformer sont de plus en plus nombreuses. Cet article, par l’exemple d’un intermédiaire-transformateur (producteur de tortillas à base de maïs natif au Mexique), contribue à explorer la nouvelle place que peut occuper cet acteur charnière de nombreux circuits alimentaires. Nous nous sommes appuyés sur une méthodologie participative d’évaluation des impacts des initiatives alimentaires urbaines pour explorer les capacités de transformation des systèmes traditionnels de ces acteurs. Les résultats mettent en avant des impacts potentiels réels, notamment autour de la revalorisation de méthodes de transformations anciennes, la nixtamalisation. Ces atouts sont toutefois accompagnés de difficultés à intégrer le secteur productif de manière durable.
