Dignity as a Gift: an Immersion in the Gastronomic Experience at Refettorio Paris

Résumé

This videographic research focuses on the facets that shape the experience in Refettorio Paris : an inspiring solidarity restaurant located in the crypt of the church of La Madeleine. The Refettorio offers a gastronomic experience to people in vulnerable situation, transforming unsold items that would be wasted. In a triangular perspective (Denzin, 1978), we noticed three dimensions that could bring back dignity for consumers: (1) responding to the request for entirely aesthetic aspects of consumption (Charters, 2006), from the desire to have dinner in a beautiful restaurant to the taste of haute cuisine; (2) connection with others (commensality), highlighting the importance of seating that allows guests to share the meal together; (3) living an extraordinary experience which allows the guest to (re)discover new or forgotten sensations. These dimensions seem to appear as facilitating conditions in accessing dignity and well-being. They echo the three needs of Self-Determination Theory (Ryan and Deci, 1985). The emerging findings allow us to propose the concept of Postmodern Xenodochium: a welcoming place that responds to the quest for aesthetics, relatedness and extraordinary experience for consumers in social vulnerability. The characteristics of heterotopia (Foucault, 1967) seem to allow self-esteem and may help to put oneself in a state of mindfulness (Baer and al., 2006) that could reinforce consumers’ well-being (Brown and Ryan, 2003).
