Résumé

This chapter outlines the issues and features of consumer research on nonfood products from a food sensory scientists’ standpoint. Most methods developed in food sensory and consumer science apply to nonfood products. However, product complexity, diversified and lasting usage, and a strong interaction with context are frequently encountered features that raise additional methodological issues. Although “nonfood products” cannot be treated as a single category, we identified issues linked to the factors of the products to be evaluated, those related to usage, and those related to subjects who will evaluate the products. This review also includes the practical aspects of testing nonfood products. Eventually, we discuss why consumer researchers and professionals in nonfood sectors obviously need to build on disciplines such as ergonomics, design, and product experience in addition to sensory consumer science. In turn, we strongly believe that we can draw methodological lessons from nonfood applications for the evaluation of food.
