Could a sensory education improve taste identification, willingness to taste vegetables and food memory in 5 to 7 years-oldchildren?

Résumé

The first objective of this study was to characterise children according to their ability towards taste identification, their willingness to taste usually disliked vegetables and their ability to memorize food previously eaten. Those aspects are assumed to be important in overall food behaviour in children. Three tests for measuring these aspects in 5-7 years-old children were designed. These 3 tests were taken by 160 children aged 5 to 7. First results revealed that children were able to identify 37%, 34%, 29%, 26% and 22% of respectively sweet, salty, umami, bitter and sour taste. One half of children were not willing to taste green vegetables. Individual child characteristics seem to have no influence on those behaviours. Results of the memory test showed better memory performances for girls compared to boys. The second objective was to highlight the effects of a sensory education on these 3 aspects of food behaviour. We hypothesize that sensory education will improve taste identification, food memory and willingness to taste vegetables. A program of 15 interactive lessons composed of tasting of different kinds of foods, group discussion about food perception and dish preparation by children has been designed. One half of the 160 children followed this sensory education program over 3 months and the other half is used as a control group. Once the sensory education will be completed, the 3 food behaviour tests will be taken again by the two groups of children. The final analysis of the complete set of data will make it possible to assess whether and to what extent the sensory education modify the food behaviour of children.
