Determining preservatives in meat products by flow injection analysis (FIA): A review

Abstract Various preservatives are added to meat products to prolong their shelf-life stability and enhance their safety. Determining preservatives is essential for purposes of legislation and consumer safety. The analytical methodologies based on flow injection analysis (FIA) can be highlighted among those available. FIA methodologies offer interesting advantages compared with other procedures, including versatility, precision, low cost, speed and automation. This review considers the present status of the published FIA methodology available for the determination of preservatives in meat products. The techniques are described with their application to different preservatives (nitratre and nitrites, sulfites, sorbates, benzoates and p-hydroxybenzoate esters), emphasizing aspects related to extraction, separation, detection and quantification procedures in meat matrices.
