The traditions surrounding Saint Nicholas (celebrated on 6 December) are characterised not only by their extraordinary vitality, which has never waned to the present day, but also by their wealth of mythical underpinnings (agrarian in particular), which are still perfectly legible despite the constant evolution of the rituals, always anchored not only in a particular place but also in a particular time. Nicolas is at the heart of a scenario that pits light against darkness, scarcity against abundance (or reserves), life against death. His associations with water, salt and even nickel, his bi-facial dimension in red and black, and his masked appearance are all explicit markers of a fundamental plasticity that allows him to adapt constantly and thus enjoy a kind of immortality.
