Determination of partition coefficient of aroma compounds in polysaccharide solutions by the phase ratio variation method

The partition coefficient K of aroma compounds (hexanal, ethyl butyrate, 2-hexanone and trans-2-hexenal) in polysaccharide solutions was determined by the phase ratio variation method (PRV method) using equilibrium headspace. This method is based on the relationship between the partition coefficient and the phase ratio of the headspace vial and allows to demonstrate the retention of aroma compounds by maltodextrin and β-cyclodextrin. The retention of aroma compounds by polysaccharides was studied with increasing temperature from 60 to 80 C. The better retention in maltodextrin and β-cyclodextrin solutions was shown for the more hydrophobic compounds. The results suggest that the PRV method is a rapid and easy way to calculate the partition coefficient without the need to measure the concentrations of aroma compounds in gas and liquid phases.
