Résumé
Batch distillation column is frequently used in Eastern countries to produce fruit spirits. This kind of distillation offers good possibilities of separation thanks to its flexibility in terms of operating modes. However, the separation of the volatile compounds is not well understood and controlled. This project, by the use of the commercial simulator ProSim's BatchColumn®, investigated the behavior of numerous volatile compounds during batch distillation of a barley fermented mash in a whisky distillery. The study clearly illustrated the distribution of the volatile compounds between the different distillate fractions: discarded head, recycled head, heart, and recycled tail.
