Cuisiner les kīrai (légumes feuilles) et soigner les corps

Résumé

Kīrai, wild or cultivated leafy vegetables, are eaten by all categories of consumers in the town of Pondicherry, southeast India. Overlooked by public policies, they contribute to ensuring the intake of fibres, micronutrients and vitamins which are drastically deficient in this country where nutritional inequality is high. Falling within the analogy plants-body/being-environment, these products are today being rediscovered by the middle classes aware of nutritional and environmental issues. These are the markers of knowledge related to the health and well-being of the family, transmitted specifically between women, in the domestic space of the kitchen. Considering food as a common preoccupation invites to take this knowledge into consideration and to inscribe the cooks in their ability to resist the policies of commodification of food. As the central space for the reproduction of inequality issues, the kitchen is also the place where the agency of the cooks is expressed, politicising, from the private sphere, the debates on the dietary regimen desired collectively.
