Relation entre les paramètres de la couleur et l’abondance de protéines biomarqueurs chez des taurillons de deux races à viande

The aim of this research was to study the relationship between earlier identified proteomic biomarkers with meat color traits
evaluated instrumentally on Longissimus thoracis muscle of young bulls from two breeds differing in their earliness. The
principal component analysis based on the biomarkers and meat color traits allowed the discrimination of meat samples of the
Aberdeen Angus (AA) and Limousine (LIM) breeds. The L*, a*, b* and C* coordinates were correlated with several protein
biomarkers and were in some cases breed-dependent. Irrespective of the direction of the biomarkers in the regression models
for each breed, the explained variability varied between 31 and 56%. This study confirmed once again the importance of
numerous biological pathways in beef color development. The results suggest that biomarkers may be used to classify meat
cuts sampled early post-mortem according to their future color.
