Forced to arbitrate permanently between the standardization necessary for economies of scale and the specification necessary for a finer penetration of markets, the large-scale food retailing applies the same models in all the spaces which it invests, at the same time as it develops a kind of territorialisation: while being a stakeholder of the change in the rural areas, the large-scale food retailing takes into account their specificities and in so doing, participate in their reproduction as specific contexts of action. Further, hypermarkets and supermarkets do not content with adapting themselves to the context; they participate in the construction of the rurality which seems to them commercially valuable.
