Des biomarqueurs aux équations de prédiction des qualités sensorielles de la viande de vaches de réforme

In this study we used a list of proteins previously identified as biomarkers of tenderness in the Longissimus thoracis of young bulls from several breeds. The objective was to verify if these biomarkers could be used to predict tenderness and other sensory qualities in cows from three French breeds: Holstein, Normand and Blond d’Aquitaine. Partial Least Squares (PLS) analysis betw en protein relative abundances evaluated by dot-blot and sensory qualities estimated by trained panels was used in order to establish prediction equations. The predictions obtained varied from 50 to 83% according to the quality and breed studied.
